Korean-BBQ

No BBQ is complete without a sweet and sticky pork dish, are we right? The flavour infused into pork from smoking is literally heaven in your mouth!

The guys over at Pups with Chopsticks have come up with this unique take on Chinese BBQ Pork, adding things like Korean pepper flakes for a spicy little kick.

The guys also give you all kinds of tips and tricks on what cuts of pork work best.

Ingredients

Marinade

  • 2 tablespoons fancy/cooking molasses (not blackstrap molasses) – can also be substituted with maltose, barley malt syrup or honey)
  • 1-2 cubes red fermented tofu (and 4 teaspoons of the sauce, mashed together) – this is also known as red bean curd
  • 2 tablespoons hoisin sauce
  • 2 cloves garlic (roughly chopped)
  • 4 slices of ginger (roughly chopped)
  • 1 teaspoon Chinese five spice powder
  • Utensils
2 tablespoons Chinese rice cooking wine (or dry sherry)
  • Utensils
(optional) 1 tablespoon Korean pepper flakes (for additional colour and a mild spiciness. It will also give it a more earthier flavour)

Meat

  • 2-3 lbs pork shoulder (cut into long 3 inch thin strips)

Glaze

  • 2 tablespoons honey

3. Smoked Mac and Cheese

Smoked-Mac-and-Cheese

We threw this recipe in as a bit of a curveball. I mean who knew you could smoke side dished, right? And macaroni and cheese in the smoker?

Who the hell would have thought it!

Well we have tasted this and it is absolutely amazing. Fire up your Pit Boss Pellet Grill and wow your vegetarian guests with this bad boy.

Ingredients

  • 1lb (16 oz) Elbow Macaroni.
  • 1/4 cup flour
  • 1/4 cup butter
  • 3 cups milk
  • 8 oz cream cheese
  • 36 oz of hand shredded cheese ( I like to use a mix of cheeses. One that is sharp and one that is a bit softer and will get extra gooey. I used 16 oz Colby Jack and 16 oz of Sharp Cheddar. But go crazy it’s hard to mess up your cheese choices!)
  • Utensils
Pepper to taste. (We already have loads of salt from the cheese so we don’t want to add any more.)
  • Utensils
    Cooking spray
